It belongs to a family of soft-ripened cheeses called triple crèmes that have higher fat in dry matter than the average Brie; additional cream is added during the cheese making process, resulting in a delicate, fluffy, and velvety interior reminiscent of whipped butter. Just as other Brie styles, Crémeux ripens from the outside in. The wheel is covered with a white, downy rind that makes it as pretty as an iced birthday cake and twice as delicious.
