This cheese is aged for nearly three months and its blue veins radiate outward from a natural, crinkly brown crust, revealing the prized smooth honeyed flavour of a traditional Stilton. Flavor ranges from mild and sharp when young to rich and tangy when mature. The cheese has a smooth creamy pale curd with blue veining throughout. The rind of the cheese is grey to brown in colour and should be dry to touch.
